PAN SEARED SALMON WITH ROASTED FINGERLNG POTATOES

Enjoy this wonderful salmon recipe for a healthy and flavorful meal.

INGREDIENTS

  • 1 8oz salmon piece
  • 2oz artichoke heart
  • 1 oz red bell pepper julienned
  • 2 oz kalamata olive
  • 2 oz broccolini

GREMOLATA

  • 1 oz parsley chopped fine
  • 1 lemon juiced and zested
  • 1 garlic clove minced
  • 1 oz olive oil
  • salt and pepper to taste

METHODE

  1. combine all of the gremolata ingredients togehter and sit for 10 minutes at minimum
  2. sear the salmon presentation side up and bake for 10 minutes.
  3. steam the fingerling potato for ten minutes or until they are fork tender.
    cut them in half, season them with salt and pepper and lightly sear them until they are golden brown.
  4. saute the veggies with a tsp of white wine and olive oil.
  5. make the gremolata and let it sit for ten minutes before using.

ASSEMBLY

  1. place the veggies on the center of the plate,
    add the potatoes around the veggies and place the salmon on an angle above the veggies.
  2. top with the gremolata.
